Vietnamese duck congee and cabbage salad (Cháo vịt và Gỏi vịt)

♥ Ingredients:
(4 portions)

1 whole duck (about 2 lbs)
1 onion, peeled, cut into quarters
½ onion, peeled, sliced
1 4-inch piece of fresh ginger, peeled and sliced
1 2-inch piece of fresh ginger, peeled, ground
¾ cup (75g) rice
¼ cup glutinous (25g) rice
2 garlic cloves, peeled, roughly chopped
salt
black pepper
1 bunch green onion, washed and chopped
¼ cup chopped rau răm leaves (Vietnamese coriander)
¼ cabbage, thinly sliced
½ carrot, peeled, thinly shredded (optional)
2 tbsp roasted peanut, chopped
2 tbsp deep fried shallot
½ tbsp oil

Ginger dipping sauce:
1 ½-inch piece fresh ginger, peeled
1 garlic clove, peeled
1 fresh hot chilli, seeded, minced
½ cup (120ml) hot water
¼ cup (50g) sugar
2 tbsp (30ml) fish sauce

♥ Nguyên liệu:
(4 phần ăn)

1 con vịt khoảng 2 lbs
1 củ hành tây, lột vỏ, bổ tư
½ củ hành tây, lột vỏ, cắt múi cau
1 khúc gừng dài khoảng 4-inch, gọt vỏ, thái lát
1 khúc gừng dài khoảng 2-inch, gọt vỏ, giã nhuyễn
¾ cup (75g) gạo
¼ cup (25g) gạo nếp
2 tép tỏi, lột vỏ, băm nhỏ
muối
tiêu
1 bó hành lá, rửa sạch, cắt nhỏ
¼ cup lá rau răm, rửa sạch, cắt nhỏ
¼ bắp cải
½ củ cà rốt, gọt vỏ, cắt sợi (nếu muốn có màu cho đẹp ^-^)
2 tbsp muỗng canh đậu phộng rang vàng, giã thô
2 tbsp muỗng canh hành hương phi vàng
½ tbsp muỗng canh dầu

Nước mắm gừng:
1 khúc gừng dài khoảng ½-inch, lột vỏ
1 tép tỏi, lột vỏ
1 trái ớt, bỏ hột, băm nhuyễn
½ cup (120ml) nước nóng
¼ cup (50g) đường
2 tbsp (30ml) nước mắm
